When Jon Miller, owner of BubbleHouse Brewing (2121 Ogden Ave., Lisle), pulled his rye-smoked porter—called Smoky Poofs because it’s smoked with cherry wood—in the spring, the backlash was swift. “I like to change our menu so I can offer a variety of styles,” Miller says. No matter that all those toasted oats and chocolate notes didn’t pair well with the hot weather, his regulars wanted it back. So he’s accommodating them this October, delivering a brew built for flannel, football, and fireplace season. —P.G.
