The whiskey list at Barrel + Rye in Geneva is so potent it could stagger a cowboy at 100 paces. More than 200 different brands of brown firewater, plus seasonal cocktails, cycle through every year. But one drink refuses to leave: a smoked Manhattan—Evan Williams, angostura bitters, sweet vermouth—served in a glass fortified with wisps of cedar smoke. It’s nothing less than a sweet, smoky fireplace in a glass.
