Visitors to Geneva must try Niche’s housemade sausage board, which includes three types of sausages that are ground, stuffed, and smoked in-house. Chorizo, smoked andouille, and Korean chili/lemongrass sausages are paired with bread and butter pickles, beer mustard, and sourdough baguettes. “It’s easily sharable and quite popular,” says chef Chris Zanoni. “It’s great with a bourbon (or two).”
