There’s always music in the air at Stolp Island Social, the Amy Morton–owned spot bordering the Paramount Theatre in Aurora. So it’s no surprise Debbie Gold’s carrot hummus is all jazz, baby. “We wanted something tasty,” says Gold, “that people could enjoy before or after a show.” So she riffed it into existence. Charred carrot purée. Sunflower-seed tahini. Fresh cheese. Seasonal veggies. The result? Pure polyphony on a plate.
