Resident chef Brad Hudetz (Green Street Smoked Meats, Alinea, Spiaggia) and his brother Justin have opened a fast-casual kitchen in Plainfield centered around a massive 4,200-pound, wood-burning smoker they have dubbed “Smoke Force One.” Shipped direct from Mesquite, Texas, the smoker now resides in Station One Smokehouse (15025 S. Des Plaines St., Plainfield, 815.271.6328, stationonesmokehouse.com), an old firehouse they converted into an authentic Central-Texas barbecue experience.

“The renovation of our town’s longtime firehouse has been quite an undertaking,” says Justin. “We’re happy to say that although the space looks very different, we have taken many measures throughout our decor to pay homage to the building’s history.”

The brisket, pastrami, pork, sausage, and chicken are all sourced from Midwest farmers. Try the Frito Pie—smoked brisket chili served with queso and pickled jalapeños piled in a bag of Fritos—or the (Sunday-only) Bloody Mary, topped with celery, pickled vegetables, pork belly, and brisket burnt ends.
