Vegan Skillet Brownies

Yield: 8 servings
1 box brownie mix
2⁄3 cup non-dairy milk
1⁄3 cup coconut oil
2 teaspoons vanilla extract
graham crackers
1 bag vegan marshmallows
- Spray a cast iron skillet with non-stick spray and preheat grill.
- Beat together brownie mix, non-dairy milk, coconut oil, and vanilla until batter is formed. Spread batter evenly in the skillet. Cover with marshmallows.
- Make a dome out of foil and cover the skillet, leaving space for the marshmallows to expand without getting stuck to the roof. Set the skillet on the grill and close cover.
- Cook for 10 minutes, then remove foil and cook for 5 more minutes.
- Remove the hot skillet from the grill and let cool. Scoop up entire mixture with graham crackers.
