Vegan Skillet Brownies

Yield: 8 servings

1 box brownie mix
2⁄3 cup non-dairy milk
1⁄3 cup coconut oil
2 teaspoons vanilla extract
graham crackers
1 bag vegan marshmallows

  1. Spray a cast iron skillet with non-stick spray and preheat grill.
  2. Beat together brownie mix, non-dairy milk, coconut oil, and vanilla until batter is formed. Spread batter evenly in the skillet. Cover with marshmallows.
  3. Make a dome out of foil and cover the skillet, leaving space for the marshmallows to expand without getting stuck to the roof. Set the skillet on the grill and close cover.
  4. Cook for 10 minutes, then remove foil and cook for 5 more minutes.
  5. Remove the hot skillet from the grill and let cool. Scoop up entire mixture with graham crackers.
